Is there any point in going back for a second bachelor's degree prior to doing a master's?

There is no need to do option 1. You will be wasting time. The only good thing about option 1 is that you get a good foundation and knowledge in IT before you do the master program. Since the master program requires you to take prerequisites, that itself is good basic knowledge. When you apply for jobs all they look at is your highest degree. My first major was Liberal Studies, then I went for my master in Health Administration. Never once was I questioned or denied a job because of my BA because they saw I had a master in Health Administration. Also since there is a need for IT, you will have no trouble finding a job.
